Tea time is a moment to pause for relaxation and renewal, a time to enjoy the warmth of a fire in the dark of winter while munching on something delicious or to sit beneath the shade of a tree in the summer garden. Like any ritual, unless it’s continually infused with new life, it can lose its sparkle and its meaning, thus taking the ritual of high tea replete with finger foods into the next century can be unconventional and uncompromisingly delicious.

ORANGE GINGER BEER

makes about 12 glasses

 

What You Need

50–100g of fresh ginger root, roughly chopped (depending on how strong a ginger flavor you want)
1 liter of spring water (only half a liter if you plan when serving it to add fizzy water)
1 cup of acacia honey (you can use another liquid honey if you prefer, but acacia has such a fine flavor that I like it best)
1 cup of freshly-squeezed orange juice
1 tablespoon of finely-shredded orange zest
1/2 teaspoon of ground cinnamon

Here’s How

Place the roughly chopped ginger and the water in a blender or food processor. Add the acacia honey and the cinnamon and blend. Stir well and put in the refrigerator for 24 hours so the flavors meld. Strain, then chill for another hour. Pour over ice to serve immediately.


Based on the traditional recipe for ginger beer, this one is a great drink for higher tea. You can have it as is, or you can mix a little fizzy water with it. Sometimes I use only half a liter of water instead of a full liter when making the recipe, then top up just before serving with half a liter of sparkling water. This recipe will keep for four or five days in the refrigerator.
