MEXICAN SALAD WITH ALMONDS

serves 4

Swiss Chard

What You Need

200g of Swiss chard of all different colors
3/4 cup of almonds
2 cloves of garlic, chopped fine
2 medium turnips, julienned fine
1 tablespoon of fresh thyme, chopped

Here’s How

Slice up the chard, including some of the stems, selecting a mixture of textures and colors, and place into a large bowl. Cover with a vinaigrette dressing or something richer, like aïoli or lite mayonnaise. Add the almonds, the garlic and the thyme. Toss the salad and separate out into four flat salad plates. Serve immediately.


Most people have a limited idea of what constitutes a salad. In truth you can make a salad out of almost any raw vegetable. Its success depends upon mixing colors and textures and supporting the crunchy lightness of the vegetables with something richer, perhaps a mayonnaise or an avocado dressing or a handful of nuts or seeds. It’s fun to make a salad out of virtually nothing. This is one I made one day when I found little in my larder but some beautiful Swiss chard that a neighbor had grown organically in his garden, plus a handful of almonds.
