GRILLED PORTOBELLO MUSHROOMS

serves 4

Mushrooms

What You Need

8 good-sized Portobello mushrooms
3–6 tablespoons of olive oil
12 cloves of garlic, chopped fine
200ml of rich red wine
The juice of 1 lime
1 lime, cut into four wedges
The zest of 1 lime, finely shredded
50g of fresh basil, finely chopped
50g of chives, finely chopped
1 teaspoon of vegetable bouillon powder or 1/2 a cube

Here’s How

Mix in a bowl all the ingredients except the mushrooms, half of the basil and half of the chives, to make the marinade. Dip each mushroom into it to cover each well. Now place the mushrooms right side up under a hot broiler and grill for 5 minutes making sure to replenish the marinade to the top of each as it dries out. Turn the mushrooms over and do the same on the underside. Serve immediately upside down (the bottom side of the mushroom holds the delicious marinade inside it) with a wedge of lemon topped with the chopped herbs put aside to use as the garnish.


Portobellos are one of the most readily available mushrooms. So rich and filling are these gentle giants of the earth that they make a meal in themselves. They are the easiest thing in the world to prepare and ready in 10 minutes. Serve them with a salad of fresh herbs and a cooling granita or sorbet afterwards to make a brunch meal that is quick, delicious and easy to prepare.
