MACAROON SURPRISE

serves 2

What you need

250 ml (8 fl oz) freshly-squeezed orange juice
75 g (3 oz) fresh coconut with both the shell and inner brown skin removed or 40 g (11/2 oz) shredded unsweetened coconut
1 tsp almond extract
250 ml (8 fl oz) crushed ice
orange slice
sprig of mint

Here’s how

Place the orange juice, coconut and almond extract into a food processor and blend to mix. Now add the ice and continue to blend but not so much that you destroy the slushiness of the crushed ice. Serve immediately topped with a slice of orange and a sprig of mint.


I adore coconut – the smell, the flavor, even the oil itself. This recipe makes a filling breakfast in a glass – one I especially like in midsummer when it’s really hot. The oranges must be ripe, or you’ll need to add a little honey. The coconut cream makes the drink rich and delicious. Coconut is rich in saturated fat but there is some evidence that it is an unusual form of fat with protective properties. I like using fresh coconut whenever possible. I look for heavy coconuts, shake them and listen for lots of liquid. I also check to make sure they have no soft or moldy spots. You can buy commercially shredded coconut, but lots of food manufacturers add extra sugar to it and propylene glycol to help keep it moist. If you don’t have fresh coconut, look for unsweetened shredded or flaked coconut without additives.
