SPICED MANGO LASSI

serves 2

What You Need

2 ripe mangoes chilled and chopped
250ml of soya milk
1 teaspoon of ground cinnamon
1/4 teaspoon of freshly ground nutmeg
1/2 teaspoon of ground cardamom
1 small handful of organic raw cashews (optional)
Honey to taste

Here’s How

Place the cashews in a blender with 1/2 cup of Soya milk and blend until creamy. Add the mangoes, the rest of the Soya milk, cinnamon, cardamom, nutmeg and honey and blend until smooth.

Other Ways To Go

PEACH: Substitute three ripe peaches for the mangoes.
BLUEBERRY: Two cups of blueberries instead of mangoes.
APPLE: Two apples: increase the cinnamon.
SALT: Leave out the honey and add 1/2 teaspoon Maldon sea salt.

I fell in love with lassis in India where they cool a curry and refresh the palate. I once traveled from the middle of India to Calcutta by car, eating in the truck driver’s stops which are nothing more than pit stops with a fire and a couple of pots and pans. The food was wonderful – absolutely fresh and simple. When at last I reached the city – after pushing the car over bridges too rough to drive over – what I wanted most in the world was a spiced lassi. Lassis are traditionally made with milk or buttermilk, but I prefer to make mine with organic Soya milk which is creamy and rich, or even rice or oat milk.

SPIRITUAL FOOD

Mangoes have long been called food for the gods. It was Paramahansa Yogananda who wrote in his Autobiography of a Yoga ‘It is impossible for the Hindu to conceive of a heaven without mangoes’. He may have known nothing of the biochemistry of this sensuous fruit, but he certainly got right its uplifting properties. Mangoes are rich in anacardic acid and anacardiol – phytochemicals which bear a strong resemblance to the drugs used to treat depression. This makes them a great way to start a day – especially if you can get them tree-ripened and organic. That once meant a trip to India. Nowadays more and more high quality mangoes are available.
