STRAWBERRY/RASPBERRY ICE

serves 4-6

Succulent berries

What you need

700 g (11/2 lb) frozen strawberries/raspberries
juice of 1 lemon
100 g (4 oz) acacia honey

Here’s how

Tip the frozen berries into a food processor with the juice of a lemon and the honey. Blitz until smooth and bright scarlet. Pour into chilled dishes and pop into the freezer for 5 to 10 minutes to chill. Alternatively, you can pour the unfrozen mixture into the bowl of an ice-cream machine and continue, following the manufacturer’s instructions.
