Within each one of us, thin or fat, there lives a joyous creative spirit. It is the spirit of the child - of life itself - a completely individual nature which is constantly seeking freedom simply to be what it is and to do what it wants to do. The world we live in as we grow up seldom leaves space for that unique spirit to develop fully. Our parents, our education, our culture is continually feeding us with rules about what we should and shouldn't do - should and shouldn't be. It is a little like getting up each morning and having to put on your straight jacket before you begin the day. For many people - especially women - weight control has become part of that straight jacket. They worry constantly about how or what to eat or not to eat. They agonize over one or two pounds - or fifteen - gained or lost and they treat themselves like naughty children who need controlling lest they get out of hand and eat something they shouldn't.
A person in any kind of straight jacket is a person disempowered. It is a person who does not trust himself or herself and who to a greater or lesser degree lives in fear - fear of food, fear of what he or she might do, fear of disapproval from a society impassioned by notions of thinness. I have known that struggle. I have lived it myself and I see evidence of it all around me in women caught in the jaws of bulimia, anorexia or compulsive eating and in men who overindulge in alcohol or fatty foods, struck down by a heart attack in the prime of life. This has always seemed a terrible waste.
Power for Change
20 years ago I began to ask questions like: Why do so many people struggle with weight in our society when the vast majority in other cultures never even seem to grow fat? What causes the distortions to our bodies not only in body size and fat deposits, but in the degenerative conditions, from heart disease to rheumatoid arthritis that come in their wake? Is it really weakness of character or lack of will power that makes us all eat too much and gain weight? And - most important of all - is there a way of eating and living that enables someone who is carrying too much fat around to eat and live so that whatever distortions have already appeared will disappear quite naturally as part of the process of regenerating the body through food and exercise?
I went looking for answers. I set out to discover what has brought about the widespread obesity and weight problems that we experience in the Western World. I looked at the work of Sir Robert McCarrison who initiated the first epidemiological investigations into the relationship between diet and the development of disease, including obesity. I investigated the theories and practices of Max Bircher-Benner MD who created the Bircher-Benner clinic in Zurich which is now run by the Swiss government, where for almost a century people suffering from overweight and other degenerative conditions have gone to find themselves transformed simply by changing the way that they live and eat. In the seventies I became fascinated by the work in lifestyle change as a means of reversing degenerative diseases that was being carried out at the Longevity Center of Nathan Pritiken in California, where 85% of the patients with hypertension were able within four weeks to restore their blood pressure to normal and get off medication as a result of changes in diet and lifestyle alone. I discovered that at another center in California - Loma Linda University - research and health education programs were being carried out with similar results. There, overweight people shed their excess fat without counting calories but by shifting the kinds of foods they eat away from high fat, high protein convenience foods, to a low-fat diet based on whole grains, legumes, vegetables and fruit. I was surprised to learn too that, once the oppressive influence of the Western diet is eliminated even many diabetics who have been on 50, 60, 70 or 80 units of insulin for 5 to 10 years, are able to restore their insulin production to normal within weeks.
Super Healthy
During the course of my investigations I became fascinated by one particular group of people - the Seventh Day Adventists - a religious group in the West replete with doctors and scientists who since the nineteenth century have been exploring in depth the relationship between such things as diet, exercise, trust, and health. Adventists' teaching is based on the notion that to evolve spiritually one needs to ensure that the body is strong, clean and healthy and that the brain - as part of the body - functions properly. Few Adventists smoke. They eat a lot less animal fat and sugar than does the general population. Their age-adjusted death rates for heart disease and cancer are way below the national average in the United States. Some are total vegetarians, other consume animal products. I was also intrigued to find out that the death rate for those that are complete vegetarians is significantly lower again than those who incorporate meat into what is otherwise a very good diet. Another interesting finding from a large scale study of Adventist health is that although the lacto-ovo vegetarians - that is those who eat eggs and milk - have a death rate for cancer and heart disease lower than the meat eaters, those who are complete vegans - that is who eat no milk products or eggs - have the lowest of all. Their rate of colon cancer and cancer is so low in fact that it is only about 50% of the general US population. When vegan Adventists do develop heart disease it tends to occurs ten years later than in the rest of the Western world. Numerous studies of other groups of people all over the world have shown that when men and women living on a low fat diet, such as the Japanese, migrate to Western Countries and alter their diet they very quickly develop our degenerative diseases including obesity. Rates of colon cancer also soar as does breast cancer. In short, when people eat differently they produce different disease patterns. Overweight, just like our other degenerative conditions, I realized, is really a problem of lifestyle.
